Experts agree that the industry’s long-standing assumption—that publishing high-quality, peer-reviewed science is sufficient to guarantee public trust—is officially obsolete. Laura Hoover of Edelman US argues that consumers do not access raw science; instead, they consume interpretations provided by third parties, often influencers who prioritize entertainment or controversy over accuracy. Consequently, food scientists must pivot from merely proving efficacy and safety to actively shaping the narrative before misinformation takes root. CEO Charlie Arnot emphasizes that if a consumer finds the messenger untrustworthy, they will mount an emotional, visceral rejection of the information—and by extension, the organization behind it. Instead of treating every internet user as an adversary, scientists should ask clarifying questions to understand the underlying values or fears driving a consumer’s specific critique of food products.
