The food and beverage industry is currently facing a critical crisis of authority, as the rise of social media influencers and engagement-driven algorithms increasingly prioritize controversy over empirical evidence. According to a recent report by the Institute of Food Technologists (IFT), this shift has become a top concern for industry professionals, with nearly half of 5,000 surveyed experts reporting that they are “extremely concerned” about the impact of misinformation. During the IFT FIRST conference, IFT vice president William McDowell underscored that the industry is confronting a fundamental challenge: in an environment where objective facts no longer hold the same persuasive power, how can food scientists meaningfully communicate and regain consumer trust?

Experts argue that the primary hurdle is a flawed reliance on the assumption that publishing robust, peer-reviewed science is sufficient to guarantee public belief. Laura Hoover, executive vice president at Edelman US, noted that the era where “doing the work” was enough to ensure public confidence is over. Modern consumers do not digest raw scientific data; they consume interpretations of that science provided by influencers, bloggers, and social media figures. To get ahead of the curve, industry leaders must shift their focus from merely proving the safety or efficacy of a product to proactively positioning themselves as trusted interpreters of the science before misinformation takes root.

To effectively navigate this landscape, communication must move away from the “spray can effect”—a one-way flow of information from credentialed scientists to the general public. Laura Lindenfeld of the Alan Alda Center for Communicating Science warns that even a hint of professional arrogance or ego can be fatal to these efforts. Instead, organizations are urged to treat communication training with the same rigor and infrastructure as research and development. By fostering a dialogue rather than a lecture, scientists can better understand the fears and motivations driving consumer skepticism, which is the first step toward dismantling the barriers to effective communication.

The hierarchy of credibility has also shifted: in the eyes of the consumer, the values of the messenger are now two to three times more important than the data itself. Charlie Arnot, CEO of the Center for Food Integrity, emphasizes that if a messenger is viewed by an audience as unrelatable or ideologically misaligned—such as a middle-aged academic speaking to new mothers—the response is often a visceral, emotional rejection that extends to the organization as a whole. This is a primary driver behind the growing skepticism of institutions like the FDA and USDA, as social movements increasingly view government science as inherently compromised by political or industry pressure.

The solution requires a radical diversification of who delivers the message. Rather than relying on traditional institutional spokespeople, companies are increasingly leveraging influencers and creators who reflect the varied demographics and ideologies of their audiences. This strategy acknowledges that trust is rarely built on the strength of a graph, but rather on the perceived sincerity of the individual speaking. By diversifying messengers, the industry can reach skeptical pockets of the population that have previously viewed official sources with suspicion, effectively neutralizing the emotional arguments that often fuel the spread of food-related pseudoscientific myths.

On the front lines of this battle are “science communicators” like Roxanne Smith, better known as Hydroxide, who use humor and engagement to combat misinformation. Smith highlights that social media algorithms inherently reward inflammatory content, making it difficult for nuanced data to gain traction. Her strategy is to treat communication like a scientific process, prioritizing empathy and inquiry to distinguish between different types of consumer concerns. By asking targeted questions rather than aggressively debunking every individual misconception, scientists can empower a broader audience, fostering a digital environment where thoughtful, fact-based inquiry is once again seen as the standard.
