A recent video by a YouTuber alleging the use of "fake" paneer in a celebrity-owned restaurant sparked a heated online debate about food adulteration. The YouTuber’s "evidence" was an iodine tincture test conducted on paneer served at the restaurant. When the paneer turned black upon contact with iodine, the YouTuber claimed this indicated the presence of starch, implying the use of synthetic or adulterated paneer. This video quickly gained traction, raising concerns among consumers about the authenticity of paneer served in restaurants.

The restaurant responded with a statement clarifying that the iodine test merely indicates the presence of starch, a common ingredient in many dishes, especially those with soy-based components often used in Asian cuisine. They explained that the reaction was expected and did not necessarily signify fake paneer. While the initial video was taken down, the incident continued to fuel online discussions about food safety and authenticity.

Chef Vikas Khanna Weighs In: Debunking Misinformation

Renowned chef Vikas Khanna entered the fray, criticizing the YouTuber’s claims and the spread of misinformation surrounding food science. With decades of culinary experience and expertise in food science, Chef Khanna labeled the YouTuber’s interpretation of the iodine test as "terrible misinformation.” He emphasized that iodine reacts with a wide range of common ingredients, including potatoes, rice, bread, cornflour, flour, and even unripe bananas. The presence of these ingredients, either within the dish itself or through cross-contamination, can trigger the color change observed in the iodine test.

Chef Khanna expressed concern over the credibility given to "unqualified people" spreading such misinformation, highlighting the potential for unnecessary panic and confusion among consumers. His intervention underscored the need for reliable information and expert analysis when assessing food quality and safety.

The Limitations of the Iodine Test: Not a Definitive Indicator

Food experts confirm that while the iodine test can be an indicator of starch presence, it’s not a definitive test for identifying synthetic or adulterated paneer. The color change observed in the iodine test can be caused by various factors, including incidental contact with other starchy ingredients during preparation or handling. Therefore, relying solely on the iodine test to determine the authenticity of paneer can be misleading.

More comprehensive testing methods are necessary to determine whether paneer is indeed adulterated. These tests often require raw or boiled paneer samples before further cooking to ensure accurate results. Analyzing the texture, consistency, and other characteristics of paneer, combined with more specific chemical tests, provides a more accurate assessment of its composition and authenticity.
